Ingredients: 4 cups all-purpose flour (280 grams) 1 1/2 tsp baking soda 2 tsp baking powder 3/4 tsp salt 1 cup unsalted butter (or refined coconut oil), room temperature 6 oz. light brown sugar (or palm fruit sugar) 3/4 cup white granulated sugar 1 tsp vanilla extract 3 1/2 tbsp water 2 cups unsweetened shredded dried coconut 1/4 cup ground flax seed 6 oz. pitted dates, chopped 1 tsp cardamom

3/4 cup all-purpose flour 2 tsp baking powder 1 tbsp unsalted butter, room temperature 2/3 cup brown sugar (or palm fruit sugar) 3 tbsp white granulated sugar 2 tbsp water

Directions: Preheat oven to 350F. Cream butter, flax seeds, dates, and cardamom together in a food processor until well combined. Add in water, vanilla, and coconut oil, and mix well. Add in the flour, baking powder, and salt and mix just until smooth. Cover the dough with plastic wrap or wax paper and chill for about 30 minutes to allow it to firm up a bit.
